The Mizusawa Udon, specially made with a thickness suitable for tempura, is boiled and then skillfully hand-fried by artisans. It has a crispy texture reminiscent of rice crackers and is available in six flavors: nori salt, mayonnaise, sauce, curry, shichimi (seven spice blend), and sesame.
While there are recommended measurements for salt and boiling times depending on the season, udon-making relies heavily on the experience of the craftsperson.
